Fluffy Banana Pancakes
Ingredients
1 cup of whole wheat flour
2 teaspoons of baking powder
1/4 teaspoon of salt
1/4 teaspoon of cinnamon
1 ripe banana, mashed
3/4 cup of TORI Pumpkin Seed Milk
1 egg (or vegan substitute)
2 tablespoons of melted coconut oil
1 tablespoon of honey or maple syrup
Preparation:
In a bowl, mix the flour, baking powder, salt, and cinnamon.
In another container, mash the banana and add the pumpkin seed milk, egg, oil, and honey.
. Incorporate the liquid ingredients into the dry ones and mix until integrated.
Heat a pan over medium heat and lightly grease.
Pour 1/4 cup of batter per pancake and cook until bubbles appear.
Flip and cook for 1-2 more minutes.
Serve with fresh fruits and a little more syrup.
