Oatmeal and Chocolate Cookies with Pumpkin Seed Milk
Ingredients
1 1/2 cups of rolled oats
1 cup of whole wheat flour
1/3 cup of honey or date syrup
1/2 teaspoon of baking soda
1/4 teaspoon of salt
1/2 cup of TORI Pumpkin Seed Milk
1/3 cup of melted coconut oil
1 teaspoon of vanilla extract
3/4 cup of dark chocolate chips
1/4 cup of toasted pumpkin seeds
Preparation:
Preheat the oven to 350°F (180°C) and line a baking sheet with parchment paper.
In a large bowl, mix the oats, flour, honey, baking soda, and salt.
In another container, combine the pumpkin seed milk, coconut oil, and vanilla.
Incorporate the liquid ingredients into the dry ones and mix until well integrated.
Add the chocolate chips and pumpkin seeds, mixing gently.
Form small balls with the dough and flatten them slightly on the baking sheet.
Bake for 12-15 minutes or until golden.
Let cool before serving.
